Warm spiced apple cake

This recipe combines cinnamon and apples in a vanilla cake with tender fruit pockets, topped with a cinnamon streusel that adds crunch and a coffee-cake-like character.
Make the streusel first
Mix flour, brown sugar, salt, cinnamon, baking powder, and melted butter with your hands until marble-size clumps form. This topping goes on after the batter.
Coat apples with flour
Peel, core, and thinly slice about 2 large Honeycrisp apples, halving the slices crosswise. Toss them with 2 tablespoons of flour to coat evenly.
Build the batter

Whisk dry ingredients, rub in chilled butter until it looks like sand, then add eggs, buttermilk, oil, and vanilla. Stir until combined, then fold in about two-thirds of the apples.
Bake and cool completely
Spread batter in an 8 by 8 inch pan, top with streusel and remaining apples, then bake at 350 degrees for 65 to 75 minutes until a tester comes out clean.
Better with time
Store the wrapped cake at room temperature for up to 5 days. It improves as it sits, so slice and enjoy throughout the week.
