In brief
The Beatles drummer has stuck with goat cheese on bread for years, and his reason for it is pure Ringo. Ringo's cow-molecule theory is nonsense, but goat milk really does differ from cow milk in fat and protein structure. Originally reported by Fox News.
Cheese on bread, that's it

Asked by Stephen Colbert in 2021 to name the best sandwich, Ringo Starr said cheese. Two ingredients, no fuss, and he has stuck with it for decades.
“I don't have a lot of them anymore, but cheese.”
But it has to be goat
Starr cut cow dairy out entirely. Goat cheese is the only version of the sandwich he will eat now.
“But it has to be goat cheese now.”
The molecule theory

His reasoning: cows are huge, so their molecules must be huge too. Goats are closer to our size, so goat dairy suits us better.
“Have you seen a cow? The molecules are so big.”
Science says sort of
The molecule talk is not real, but goat milk does carry a higher share of small fat globules and differs from cow milk in fat and protein makeup.
A creator made it real

Instagram's @domenicskitchen recreated it: two slices toasted in butter, spread with soft goat cheese, topped with grated goat cheddar.
The internet had notes
Commenters wanted tomato and shallot, wondered why it wasn't grilled to melt the cheese, and mostly shrugged that Ringo would never do anything the normal way.
“I wonder if Ringo will ever do or enjoy one normal thing in his life.”
The main idea
Ringo's cow-molecule theory is nonsense, but goat milk really does differ from cow milk in fat and protein structure.
