The great vegan restaurant collapse

Dedicated plant-based restaurants are closing across America, even as vegan options spread through mainstream dining. What does that mean for the movement?

In brief

Dedicated plant-based restaurants are closing across America, even as vegan options spread through mainstream dining. What does that mean for the movement? Vegan restaurants are closing nationwide despite growing mainstream plant-based options, raising questions about whether dedicated vegan spaces still matter for…

A beloved refuge closes

Mad Rabbit Cafe, a fully vegan restaurant in Madison, Wisconsin, shut down this week after three years of operation. It was profitable but demanded too much of its owner's time.

Part of a national wave

Vegan restaurants are closing across America. New York City, Los Angeles, and Portland saw vegan restaurant numbers drop twenty-one to twenty-five percent from twenty twenty-two to late twenty twenty-four.

The numbers keep falling

HappyCow, an app listing vegan restaurants, recorded one thousand seven hundred seventeen all-vegan US restaurants in October twenty twenty-five. As of now, it lists one thousand five hundred nine.

Even mid-tier cities feel the loss

Even mid-tier cities feel the loss

Madison had four fully vegan restaurants when Mad Rabbit opened in early twenty twenty-four. Now one or two remain, mostly as food-court stalls rather than full restaurants.

Owner Nate Anger's sacrifice

Mad Rabbit's owner said running the restaurant consumed his life. He missed his children's baseball games, tournaments, and school band recitals to keep it open.

“I live here. I spend far more time here than anywhere else.”

What vegan restaurants represent

a painted mural on the wall of a cafe reads “Making our world a better place one meal at a time” and depicts various natural elements and food items.

All-vegan restaurants embody the joy of the animal rights movement, showing creativity, abundance, and pleasure beyond factory farming. They feel like refuge for those who hold plant-based values.

A century-old question

The vegan restaurant predates the word vegan itself. In nineteen twenty-three, French anarchist Georges Butaud co-founded the Foyer Végétalien in Paris, unsure if enough plant-based diners existed to sustain it.

“I already have some positive results. A few people have become vegan since we opened.”

Proof of concept for a movement

Vegan restaurants have long aimed to show that plant-based food is diverse and surprising, not confined to margins. They answer the question many vegans face: what do you actually eat?

Laboratories of culinary innovation

Moosewood Restaurant spread vegetarian cooking through cookbooks. Soul Vegetarian created plant-based soul food. Chef Miyoko Schinner experimented with vegan cheese before launching a major dairy company.

A golden age that faded

The twenty tens saw vegan restaurants multiply and plant-based meat companies like Beyond and Impossible gain traction. It seemed veganism might become mainstream. Then interest stalled.

Nate Anger's market miscalculation

Mad Rabbit's owner believed veganism would keep growing when he opened in twenty twenty-four. His market research suggested the trend would continue upward. Instead, it reversed.

“I felt like veganism had really hit a big stride.”

Bigger chains also retreated

Veggie Grill, Native Foods, and Planta pursued aggressive expansion in the twenty tens and early twenty twenties but eventually closed locations and abandoned their growth plans.

Cultural winds have shifted

The Make America Healthy Again movement has swung culture away from plant-based diets and meat substitutes. A protein obsession has convinced people tofu and beans lack sufficient protein.

But other factors matter too

Many restaurants, vegan or not, suffered from pandemic effects, inflation, and elevated food and energy prices. Some vegan closures reflect the natural aging of restaurants opened in the two thousands and twenty tens.

Vegan options are now everywhere

Plant-based dishes now appear on menus at Chipotle, Taco Bell, and local brewpubs. Mainstream restaurants with several vegan options compete directly with dedicated vegan establishments.

Veganism's growth has stalled

Gallup's twenty twenty-six survey found two percent of Americans identify as vegan, unchanged since twenty twelve. The vegan population is not expanding as the movement hoped.

The community question remains

Vegan restaurants provide rare physical spaces where dietary choice connects to shared identity and in-person community. The animal rights movement lacks such institutions elsewhere.

A future needs both models

A healthy ecosystem requires both dedicated vegan restaurants rooted in cultural identity and plant-based options woven into mainstream menus. The movement needs excellent vegan food wherever it appears.

Vegan restaurants as utopias

Dedicated vegan spaces offer something mainstream restaurants cannot: a glimpse of a world without animal exploitation, where the normal order is inverted for the length of a meal.

What matters most

Vegan restaurants are closing nationwide despite growing mainstream plant-based options, raising questions about whether dedicated vegan spaces still matter for the animal rights movement.
