What is bockwurst

bockwurst

Bockwurst is a German cooked sausage traditionally made from ground pork or veal, tending more towards veal.

“Bockwurst is a parboiled sausage that is smoked in hot smoke for around thirty to sixty minutes before cooking.”

The sausages Tony used

Tony Jackman used Ricomondo bockwurst, a product of the Yeoman Group marketed as a slice of Italy produced in South Africa. The sausages were smoked in beechwood and sold ready to eat.

Cooking the bockwurst

Tony had two choices: cook them in simmering water just long enough to heat them through without bursting, or fry them lightly in oil.

Making the warm potato salad

Making the warm potato salad

Tony simmered chopped onion with thyme, then fried about half a packet of bacon bits until golden and crisp.

Preparing the red cabbage

Tony braised shredded red cabbage in olive oil and finished it with fruit juice and a little mustard. He squeezed lemon juice over it to set the colour and prevent it from turning purple.

Why this dish works

Tony disliked sauerkraut, so he braised red cabbage instead, finishing it with fruit juice and mustard. The warm potato salad with bacon and the braised cabbage complement the bockwurst sausages to create a complete German-style supper.

“This easy supper dish is quite German in character.”
