Mushrooms spoil surprisingly fast

Mushrooms spoil surprisingly fast

Mushrooms contain lots of water and can go from firm to slimy in just a few days in your refrigerator. Knowing what to look for at the store helps you bring home the freshest package.

“Mushrooms can go from fresh to slimy surprisingly fast.”

Check the caps and surface

Fresh mushrooms should be firm with smooth caps and a relatively dry surface. Avoid any that are wrinkled, shriveled, bruised or developing dark soft spots.

Flip the package over

Always check the bottom of packaged mushrooms before buying. Moisture tends to collect there, and mushrooms sitting against wet packaging should be left behind.

“Moisture tends to collect at the bottom, and it can be easy to miss when you're looking down at a tidy row of caps.”

Squeeze loose mushrooms gently

If buying loose mushrooms, give one a gentle squeeze. It should feel firm rather than soft or spongy.

Open gills are not a bad sign

On white and cremini mushrooms, the veil underneath the cap opens as the mushroom matures, exposing the gills. This doesn't mean the mushroom has gone bad, just that it has a deeper flavor.

“Exposed gills alone don't mean the mushroom has gone bad.”

Store them dry until cooking

Keep mushrooms refrigerated and wait to wash them until you're ready to use them. Starting with firm, dry mushrooms gives you the best chance of cooking them before they spoil.

Know when to toss them

Slimy, wet or mushy mushrooms should be discarded. Wrinkles mean they're aging but are still safe if firm and fresh-smelling. Visible mold or bad odors mean they must go.

“If they've become wet, slick, soft or mushy, it's time for them to go.”
